I believe you should be able to simply plug the camera in via USB and it will appear as an external hard drive from which you can copy video files. Apparently, you can only transfer MPEG2 standard-def files using this method. What software will you use to edit the video? Your focus problem is easy to solve - just switch off autofocus while filming in future and set the focus manually (which is what professionals do).
